Objective quality assessment of wine using Artificial Intelligence

  • The Goal

    The aim of the PINOT project is to research and implement sensor-based AI systems that are to be used throughout the entire wine value chain, i.e. from cultivation to sale to customers.

    The sensor data obtained will support winemakers and cellar masters in both production and quality assurance by digitizing, documenting and thus reproducing the smell, taste and texture of the wine.

    The multisensory view of wine enables retailers and sommeliers to subject it to a preliminary check in order to match the delivery with the order and offer the wine to the target group, and customers benefit by receiving the wine that is right for them.

  • Motivation

    The art of winemaking is very complex and requires a lot of expertise and skill. The quality of the wine is affected by many factors, such as weather conditions, soil characteristics and the individual vinification steps of the winemaker.

    To determine the originality and quality of a wine, physical and chemical analyses are used, as well as samples by professional tasters. Especially with the latter, the analysis and documentation depends on the personal taste perception and therefore varies greatly. In addition, these wine tastings and analyses are very time-consuming and cost-intensive.
